Smokin' Hot Mango Sauce

Ok, so your not satisfied with the hot sauce you have been buying in a bottle. Well here's you chance to do something about it. This easy recipe for my Smokin' Hot Mango Sauce will surely get you fired up...and best of all it's fresh ingredients.

Smokin' Hot Mango Sauce

3-4 Mango's Peeled and Seeded
4 Jalapenos or Habanero Chili's (depending on your heat tolerance)
3-4 Lime Juiced
3-4 Lemons Juiced
1\3 Cup Orange Juice
1\3 Cup White Vinegar
1 Tsp Salt
2 Cups Water

Start by taking the mango's, lime and lemon juice, salt, and peppers and puree in a blender. Transfer the ingredients into a sauce pan, and add the remaining ingredients. Bring to a boil and simmer on low for about 45 min. Let the sauce cool, then strain it into a squeeze bottle for use. This mixture should hold up for about 3 months.

Seafood Penne

Ok, it's a big date night and you decided to invite your date over for dinner but the problem is you have not put any thought into what to make...and now it's 3 hours before the date starts. Never fear this recipe for Seafood Penne should set things off nicely..

Seafood Penne

  1. 1lb of Pasta (about 1 box)
  2. 3/4 cup of Pesto Sauce
  3. 2-3 Cups of Spinach (Washed and Rough Chopped)
  4. 2 Plum Tomatoes- chopped
  5. 2 Cups of Precooked Shrimp
  6. Handful of walnuts
  7. Handful of Gorgonzola Cheese

To start, boil the pasta until it is al dente. Once done, drain the pasta out, wash off the excess starch with hot water, and put back into the pot (after the water has been removed). Add the chopped spinach, toss and cover to let the spinach wilt. After 3-5 minutes, add the pesto sauce, precooked shrimp and chopped tomatoes and toss everything together. Before serving, sprinkle a handful of walnuts and a handful of Gorgonzola cheese for presentation. You can go more or less on these two ingredients depending on your taste.

* For an added flair, serve this pasta dish with a nice white wine such as Pinot Grigio.
